Instagram allows users to see who viewed their stories. There is an eye icon on your stories, tap on it and all persons who saw your story will be shown there.
If you have a doubt about one or more than one person, you should set the privacy in a way that only they can view your story.
Keep this process and upload stories for 4 to 5 days. If the same viewer or viewers appears daily to see your Instagram Story or profile, it means they are stalking you. - See Who Viewed Your Instagram Highlight
I’m going to be totally honest with you, there’s no official way of seeing who viewed your IG highlight. But you are allowed to perform one workaround to help you accomplish such a goal.
From your highlight, publish the same stuff on Your Story. So that you can get a list of viewers, who viewed the published stuff within 24 hours. Because after this time period, your story gets disappeared. - Enable Highlights on IG
Your IG highlights are a part of your story that you get to show within a period of 24 hours. As the stories disappear after 24 hours, you need to command IG to transfer them to the highlights section, to make them permanent on your profile.
i. Go to your Profile Settings.
ii. Tap on the Story section.
iii. Enable the Save Story to Archive toggle.
